Chef Wong's illustrious journey has seen him in prestigious roles, including Executive Chinese Chef at W Hong Kong and Chef de Cuisine at the Event Kitchen of Grand Hyatt Hong Kong. His culinary prowess has garnered numerous accolades, notably the gold medal at the 11st Asian Culinary Exchange.

Chef Simon’s Tasting Gourmet Menu

From selecting ingredients to plating design, Chef Simon infuses each dish with a fresh perspective. The menu transcends traditional cooking styles, reflecting his profound understanding and innovative interpretation of Cantonese cuisine. The six-course menu begins with an exquisite trio of appetizers, including Marinated Abalone in Aged Huadiao Wine, Crispy Lotus Root Cake with Crab Roe and Seaweed, and Pan-fried Semi-dried Oyster with Osmanthus Honey. Each dish showcases Chef Simon's clever use of seasonal seafood combined with traditional cooking techniques, resulting in rich and diverse flavours.

The soup course features Double-boiled Fish Maw Soup with Matsutake, Conch and Conpoy, highlighting both taste and nutritional value. One of Chef Simon’s signature dishes is Crispy Japanese Sea Cucumber Stuffed with Minced Pork and Shrimp in Seafood Sauce, finished with a delicious sauce that offers layers of rich texture. The dish - Braised American Lobster with Eggplant in Chili-Garlic Sauce exemplifies Chef Simon's innovative prowess by merging traditional taste with seasonal seafood for a novel flavour profile.

The menu concludes with an inventive dessert pairing: Ginger Milk Pudding with Black Sugar Peach Gum and Sweet Purple Potato Honeycomb Puff with Mango, which elegantly marries traditional dessert elements with modern innovation.
